Mother’s Day Feast

For Christmas this year, my good friend gave me a subscription to Cooking Light.  It’s such a great magazine and I look forward to getting it each month.  When it came time to plan the dinner for Mother’s Day and also my birthday, I looked to Cooking Light to plan the menu.  My sister and I worked together to pull this great meal off.

Our meal consisted of the following:

Black Bean and Avocado Salsa
Peach and Brie Quesadillas with Lime-Honey Dipping Sauce
Halibut Tacos with Yogurt-Lime Sauce
Chorizo-Stuffed Poblano Chiles with Sweet-Sour Escabeche
Amaretto Margaritas

For dessert my mom made my very favorite dessert Grasshopper pie.   By the end of the meal we were all needing to loosen our pants just a bit.

  1. Oh man, that menu sounds delicious, especially the quesadillas … and the chiles … and the margaritas! Did you make all that yourself? You definitely deserve all of your super-cool gifts, and then some!
